http://home.gna.org/gregorio/gregoriotex/details is a bit outdated. All the variables now have "gre" prepended to them. The variable you want to set it \grespacelinestext.
However, you should follow the other directions regarding making a copy of gsp-default.tex and loading your new spacing file using \GreLoadSpaceConf.
