I feel that GUI, more than that we have now, is not a good idea(1), but what I am sure, is that a GUI is another project.
This is indeed a very important point: Gregorio will never integrate a GUI, it will maybe enable facilities to create one, but, as a Linux user, I always remember the Unix philosophy: "do one thing and do it well". The aim of Gregorio is to create beautiful scores, and I think it does it better and better. A GUI can be added on top, but not mixed with it.
If I were to create a GUI, I would improve NotatioAntiqua for example. Anyway, oogregorio seems like a very interesting idea!
