That error tells me that the gregoriotex package (which defines the
command \gregoriotexapiversion) hasn't been loaded by LuaLaTeX. This is
most likely due to an attempt to compile the file produced by gregorio
directly (though it could also be caused by a missing
\usepackage{gregoriotex} command as well).
The file produced by gregorio is not a complete document. It lacks a
document class and other features that tell LuaLaTeX about your project
and what sort of structure and look it should have. All the gtex file
represents is the score itself.

They're for TeXworks specifically, but should be adaptable to your TeX
editor of choice. In particular you'll want to pay attention to the
section "Compiling the main TeX file." There is an absolute barebones
project file there that can be easily adapted to compile your scores
(just change the file name appropriately).
