In Albert's case, it would have been sufficient to only change
Porrectus.  However, he appears to be attempting to mimic the style of
one of the older books, so switching both makes sense.

It may be possible to just adjust a neume within a score using <v></v>
in the gabc, but the results may come out very strange, and I don't
recommend it.

It is certainly possible to change the glyphs, include the score, and
then change glyphs back for a different score.  This is the approach I
recommend if you want to mimic the style of two different books within a
single document for some reason.

I could wax philosophical about reproducing the "look" of a piece rather
than the "substance" of a piece, but I'll refrain from that for now.
