I think Solesmes uses space before punctuation in bilingual
French-Latin editions, and in their internal Latin editions, but not in
their bilingual English-Latin editions.

The main difficulty here is to get the space from French with the
hyphenation patterns for Latin in polyglossia and Babel, but it's not
really on the GregorioTeX side. I've never tried, but if it happens to
be difficult, don't hesitate to ask on http://tex.stackexchange.com/.
The gabc or TeX files shouldn't have space before punctuation though.
