These declarations replace characters by gregoriotex's commands, so they
don't use characters from the font itself. If you want it, you can use any
character as any command with such declarations. For example, here is what
I type to have all ℣. red, without typing \color{gregoriocolor} each time :
\catcode`\℣=\active \def ℣#1{%
{\color{gregoriocolor} \Vbar}%
\mbox{\hspace{-.2ex}{\color{gregoriocolor}#1}}%
}
