Because I've had this confusion before: when you say compiling, you mean
that you are trying to build and install the package from source (in
particular a clone of the repository since the process is trying to
compile the documentation)?
Assuming that is the case, can you please run system-setup.command (in
the contrib folder) and post the result.
Further, GregorioRef.pdf is the documentation and our "easy" build and
install process (build.sh followed by install.sh) tries to build and
install it because we expect people might find it useful to have in a
standard location. However, if you don't want it (or plan to access it
in another manner) it is possible to skip it by using the `make`
interface directly. `make all` will not build the documentation (but
will build all the other components) and `export SKIP=docs` before
running `install.sh` should cause the installation to skip over the docs
when copying files into their appropriate locations.
