Thank you for the quick reply -- I have been at a conference and I am
finally catching up on email.

It appears that the choice in that gear menu (at least under 10.6.3)
is "Make Service Inactive" and this seems to do the trick. With that
said, do you happen to know why are these new machines are repeatedly
polling the Ethernet port? My previous MBP was from 2 or 3 generations
ago and it did not do this.
