Once again, I did some more tests. When testing, I always had only one account configured, I instantly deleted the other accounts, so these were always the "first" account. I also had a look in the keychain, the SMTP password is saved in the keychain, as it should.
As stated above, this machine is a SMTP server itself, without even any authentication needed. Even E-Mailing from CLI with the "mail" command does work.
