Good News Everybody! It turns out the drivers I had for my USB monitor were causing the problem - freezing the GUI after waking from sleep. The company already released a beta driver to fix that.
It only happens with Snow Leopard so that's why it came up after my upgrade. Still not sure why uninstalling Growl made it seem to disappear but luckily I can use it again! Thanks again. -- R.J.
