An item that is not mentioned in this note is a battery isolator. The info on two
batteries is good. The panel will help.
In the cooler application, you may end up drawing down the battery to the point where
the bike won't start. With an isolator, you can draw off the auxilliary battery
without draining the main battery which starts the bike. Setting this up is quite
simple. You may even ba able to use a car battery and the GTS battery to save weight.
On an aside I have found that the cooler I use runs all the time though this is not
necessary. A timer arrangement may save you some power. As well the spot under the
seat will get quite warm from the engine. You may save energy by putting the cooler in
an insulated space in the side car.
