* gnu/packages/python-web.scm (python-httpcore): Update to 1.0.7.
[arguments]<#:test-flags>: Remove uneeded field.
[native-inputs]: Remove python-setuptools and python-wheel. Add
python-hatch-fancy-pypi-readme, and python-hatchling.
