How secure is the food supply? It could spoil. Or get infested with rats, insects, or other vermin. Or it could be poisoned by the spy. What kind of food is it? If it is just salted meat, then you'll have trouble with nutrition down the line... things like scurvy and whatnot. It may include fruits and vegetables, but they won't last forever... unless they are refrigerated (or some other means of preserving them)... once again, maybe the spy can sabotage the storage facilities. How's the morale of the defenders. Being couped up for long periods of time tends to drive people crazy. Are they able to get out for fresh air and exercise? Are there enemy snipers?
