I believe access technology institute sells an outlook 2007 tutorial for screen reader users which may help.
As for the calendar, I suspect you can configure it to some view which is usable, but don't forget window eyes gives you a complete calendar interface for outlook, so you don't have to use outlook's interface if you don't want to.
