You are going to need some help from your instructors, either to braille out the math assignments or to record them. Even if you did optical character recognition on the JPG pictures, most OCR programs do not handle math. One Japanese program, called Infti Reader, handles some math in PDF format. But it costs several hundred dollars, and its primary math language is LaTEX, a technical publishing language. There is a plug-in for Internet Explorer, called Math Player, which converts equations within web pages, written in the MathML language, into text which can be displayed and spoken by Window-Eyes and other screen readers. MathML can be generated by a program called MathType, from Design Sciences, Incorporated. This math could be placed inside a Word document, since MathType is a $100 plug-in for Word. But many pieces of this puzzle are not yet in common use.
