I feel much the same you do with the changes made beginning at 7.5.
I struggle with a lot of the same issues you do and find the so-called 
logical treeview cumbersome and time consuming.
The other day, I too had wondered about the text-to-set and set-to-text 
lutilities and came with the conclusion that perhaps keeping an old 
machine at 7.2 might prove useful.
While the treeview makes sense from a conformity and a sales point to new 
We customers, it has destroyed a lot of the comfort level I had developed 
as a user of WE going back to around ver 3.0 or so.
So take heart, you are not alone and in the past I have quietly received 
responses when I had questions saying "right on" and similar supportive 
notes.
Note that GWMicro made these changes with the best intentions, but perhaps 
they ought to have included some sort of install option where one could 
choose between classic WE interface and standard Windows.
