When you are in the recover deleted items area of Outlook accessing an Exchange server I found that the mouse navigation hot keys work best. I am not aware of any keyboard shortcuts working in that environment.
Arrow up and down until you find the message you want to recover. Newer ones default to the bottom of the list. Press numpad 7 to put the mouse pointer at the top left corner of the screen. Press insert+numpad 9 until WE reads the graphic for recover selected items. Press the left mouse click hotkey. This should toss you back into your deleted items folder where the recovered message should be located.
