For LaTex, is that built using some software package by teachers and others?
The use of standard tags sounds like something that might be able to be translated into something more screen reader friendly - perhaps a text file or something that can be read and even worked with. As for image files I think we are screwed by those folks who use them with no regard to the blind. Perhaps there is something that can read and translate them into text but I am not aware of anything unless they are in something like pDF form.
