Hi Bjarne,
I haven't yet seen a doublet that laces up the back, doesn't mean they
didn't exist, just that I haven't seen any. My thought is that the
fastening
is up centrefront, but hidden, possibly hook and eyes.

There is a jerkin in the Met Museum that laces in the back. I don't know if there is a photo of the back of it, but you can clearly see that it does in
the pattern (first ed. Blanche Payne's History of Costume.)

I have not seen it mentioned whether it is for a man or woman, it fit me
with but a few tweaks, but I don't know if that proves anything;)
