I think you could do it either way, you could narrow the hood at the neck so there's no pleating, or you could cut it deeper so there is some.
The gathering in back, well, you just make gathers along the seam. This brings in the fullness so you don't have a point in the back.
Get some muslin and play with hood shapes. You can even make them in doll sizes.
