If there is a way to alter something to fit without having the body around for fittings, I haven't found it.

If you take all the measurements directly from the body you can flatten these onto into a two-dimensional outline. I usually use the back of old wrapping paper to draw these out. Then you can overlay your pattern pieces and see where you need to add or subtract a little.

Caution: if you are making something to be worn over a corset, you need to take measurements while the corset is being worn. I'm sure that's pretty obvious to you already.
