I love Brugge (Bruges) and would go back in an instant. I spent 10 days based there, and did five day-trips by train in that time (to Mechelen, Ghent, Antwerp, Brussels, and Tournai). I did not run out of things to see; I barely scratched the surface. It is a great place for a medievalist; you can't throw a rock without hitting something that's five centuries old.

However, I wouldn't characterize Bruges as being a day trip from Amsterdam. Mapquest puts it at almost 3 hours by car.

There's a lot of the Netherlands closer in that would justify a stop, including Dordrecht, 60 miles by road. (Dordrecht is home to Henk, a longtime h-cost member who is not on the list now, but would surely remember those who were around when he was, and perhaps could offer ideas if you write him directly.) Delft is only 40 miles from Amsterdam by road, and would be a good place to go if you are interested in Vermeer and his period. Haarlem is practically a suburb of Amsterdam at 12 miles.

I think I would not have any trouble finding things to do in and around Amsterdam for a week or three! I cannot offer recommendations, though, as I have not had the opportunity and hope I will before I die, if only the dollar would get stronger.
