I have also used large plastic tubs for over 30 years with no ill effects. I numbered each tub and put a sample of each fabric in a baggie with a list of what was in the tub. This has worked for me. I agree with Dawn about not leaving in pins, rubber bands, etc. but otherwise I see no problem with plastic.
Anne You will want to be careful to not have anything metal or any printed/colored papers in with your fabrics. Remove pins, paper clips, rubber bands, tape, and don't use newspaper. The pins can rust, rubber bands and tape will break down and can stain, and newsprint gets on everything. I would be wary of colored inks transferring to fabric due to the humidity... if you have anything you printed off the internet for reference, for example, do not lay it under your white linen. These have been my experiences with storing fabric for extended times.
