I thought there would have been more to it than that. There is nothing wrong

I have a small business owner who currently running a Windows SBS 2003 server. 
He has scaled the business down significantly and wants to do away with the 
server. My question is what would be the best way to go about this?
My main concern is taking away the Exchange server and still keeping his 
existing emails, contacts, etc. for him to have on his workstation. He is using 
Office 2007. Are there any other issues I may run into?
