I know unlikely but you can never gaurentee a good cable so buying a
recommended one proven for quality would be the best option. Changing the
cables is a cheap thing to do and not very impactive on downtime for the PC
so at least I need to rule them out. As I don't have any spares I may as
well buy good ones to swap out.

I actually believe it is the intel P67 controller on the motherboard but I
don't have a spare to test with and would rather change the cables just to
be safe. In the meantime I switched the main drives to the Marvel 9182
controller but that only has two ports so I cannot connect everything to
it. So we will see if the machine can stay up overnight. If it can it
suggests to me the Intel controller.
