Hyam Maccoby wrote a book called Judaism on Trial: Jewish-Christian disputaions 
in the Middle Ages which appears rto be the authority on the topic.

One known case is that of Elijah Montalto (אליהו דה-לונה מונטאלטו, Eliahu de 
Luna Montalto) who was a physician and polemicist. He died of natural causes. 
There are known cases of inaccurate accounts because people were afraid of 
documenting their family history in real time. If the patron documents all he 
knows about this ancestor and posts a query to Jewish genealogy forums, he may 
end up with more detailed family history.

We all know of the disputation involving Nachmanides.
I have a patron who believes he is descended from another "disputant" but lost 
the reference to his name; it was a Jewish physician who debated a cardinal, 
did a great job, and was killed because of it.
 Does this ring a bell to anyone?
