Actually, the entire application is hidden (i.e. all its windows), by
Option-clicking any other window or the desktop. And the hidden app
moves to the end of the Command-Tab rotation, so Command-Shift-Tab
will unhide and activate the app you just hid.
The best part is that it's quite possible to not
even know what you hid, and there is no way to find out.
No, there's no indication in the Dock (or anywhere else) that an app
is hidden, unlike OS 9's application menu (which grays out the name
and icon). Usability is in retrograde.
This platform has shot Usability in the head, and is now parading its
corpse about in promotions.
The Dock itself is evidence of that.
