You’re mixing declarative (your operating-system configuration) and stateful (your password set with `passwd' in a shell).  When you changed the declarative configuration, it destroyed your existing user and created a new one.  Since there’s no password in the declarative configuration, it didn’t set one.  You need to set the password again.

I am still confused by the mentions of Samba, "The Samba Public User," etc.  Samba has no bearing on your goal or problems, as you have stated them.
