Plywood and metal flashing might work well:

Metal roof flashing, comes in a roll, about 6 inches or 8 inches wide::

Use it as you would the sticky tape, and fasten it to the plywood with
self-tapping sheet metal screws (power screw driver would be nice for this).

Fasten one continuous band of the flashing around the roof+wall edge for
strength.  Then overlap that edge flashing with roofing material of your
choice in a traditional way, with another layer of roof flashing along the
roof seams.  This is arranged so that water flows off and out, not down and
in.

Basically, the flashing is both the structural strength and the edge sealing
in one.

Roofing tar could probably seal the plywood without having to build up a
traditional tar paper roof, and aluminized roof coat may look better and
last longer.  Or maybe just paint it with exterior grade paint, every few
years or so.  Shingles?

The metal roofing or plastic roofing idea sounds good too.
