In detail, the differences between the two, is how they act in an active directory 
environment. 2003
are first off made more secure (again, in an AD env.), its more user friendly (for 
AD), you can
perform more tasks without having to reinstall your server in 2003 (AD) etc etc etc.

A stripped down 2003 and 2000 is more or less the same, both in performance and memory 
requirements.

XP runs basically really good too.

Which one to select, must be Z's personal choice... all of the above is only true for 
gameserver
environments, if he plans to run anything else on these machines (web / mail / other 
server) a
server os should be deployed, but for gameservers, they are equally suited... none 
better than the
other.
