If you are going to be primarily running valve games on it (cs and say hl2 once it comes out) I would definately go with the opterons, as valve have posted info on how much better the opteron can run their 64bit binaries.
The only thing in my mind, is the operating system's ability to run 64bit and 32bit apps at the same time, say any other game server that hasnt been ported yet. But, if you plan on running valve games on em primarily, there is no doubt in my mind.
