Yes. And they also bruise easily if not handled gently and chopping is rather ungentle.
The best tasting wild mushroom I have had is the parasol
(which I think is an agaric)I picked it first on the nearby Common (sort of waste ground that is open and managed)
added salt and peeper (had to chop - it is big)and made it into an omlette
Sounds delicious... I am not brave enough to pick wild mushrooms, but they are so abundant here!
yum - it can not be confused with other agarics (some of which are deadly)
and is easy to identify
The markets have wonderful mushrooms here now, in a variety that is mindboggling.
Portobellos are very popular and i love to sautee them.
