It's all in the documentation. Taking a look at

Sure. Just make a config file for each site that you want to modify and
for the nomatch page, set the nothing_found_file attribute:
<http://www.htdig.org/attrs.html#nothing_found_file>
It's very easy to virtual host in this fashion.
