We have avoided putting lots of screenshots in the help manual as is increases the download size of the Hugin package (on Linux, the manual is actually bigger than everything else).
I'm not sure if this is really something to worry about, but there is plenty of space for new walkthrough tutorials on http://hugin.sourceforge.net/tutorials/ and it would be great to see more video screencasts.
