Don't use the "Align" button on the "Assistant tab" ... ever! ;-)
When you want to calculate geometrical corrections use the "Optimise
Now!" button on the "Optimiser tab".
When you want to calculate exposure (photometric) corrections use the
"Optimise Now!" button on the "Exposure tab".

On "Cam/Lens tab" hit "Reset" to open the dialogue : check the boxes
for
-- Exposure ( to EXIF values )
-- Color
-- Vignetting
-- Camera Response
and hit OK.

Does this solve the first part of the problem ?

If not make sure you're not working in Linear color space:
--> File --> Preferences --> Control Points Editor (sic!) -->
curve ... try "gamma 2.2"

EV35 does sound way off, so there might be a Hugin bug. It might be
helpful if you could also post a pic of the preview without exposure
corrections for comparison.
