Is there any way to compute this for a single image using the optimiser? I know where the horizon is, but there doesn't seem to be a way to specify a "this is the horizon" control point. Must I manually adjust this offset until I get one which causes the horizon to line up with the equator? (It is a pity I can't do this interactively, unlike for pitch/yaw.)

I think you can, unless I have misunderstood your requirement.
Are you not able to select "move/drag" in the preview, choose "mosaic" in the "Drag mode", then select the preview image with right mouse and just drag it up to the desired position?

Cheers,
