I spoke too soon. First test was trying to export to the removable drive I
keep photos on.
I decided to try again, this time exported the TIFFs full-size and to the
desktop. Also saved the project and output to that same location. on stitch
the app requested access to desktop files, which I granted and the export
completed successfully resulting in a perfectly stitched 208MB TIFF.

Do you know why this error happened the first time?
