Well, I don't know of any other domestics that will finish up to that
blood red color and for various reasons I'm looking for domestics. If
there are other domestics with that intense scarlet color (and the
striking contrast with the cream-colored sapwood) I'd be interested in
finding out about them.

Manzanita isn't generally sold as wood except as burl (readily
available) because the pieces you can net out of manzanita are too
small for most woodworking purposes. It's the same reason you almost
never see apple wood for sale, even though it's hard and has nice
coloration: You just never net furniture-scale pieces. My bagpipe,
however, is made from apple wood and I've found it to be right on par
with, if not better than, woods more commonly used in this context.

For wind instruments, however, the pieces you can net from manzanita
would be large enough.
