If you are using Thunderbird, the definitive guide is:

That will set Thunderbird to read your mail.  At that point, selecting
all your messages and moving them to a local folder should be fairly
straightforward (assuming you've worked with Thunderbird or similar
enough to know how to create folders and move messages into them.)

A web search also turns up fairly good instructions for how to do the
same with the text-based mailer Mutt...
