In the ESS 2105-800 ("shark"), it doesn't make sense to define volumes with the maximum number of cylinders because so much space would be wasted. We have standardized our shop on volumes with 61146 cylinders. That gives us four volumes per eight-pack and doesn't waste anything. Ours are configured for RAID-5 and 6+P+S. If we had another configuration, we would probably choose another value.

IMHO it also depends on HDD capacity.
The other option is to create "standard" (sometimes meant as max. # of cylinders) giving the remaining space to "category B" volumes. Cat. B volumes can be assigned to non-critical functions, because it could be more cumbersome to do full-volume copy operations (volume dump, FC, PPRCs, XRC).

BTW: AFAIK some copy services on ESS 800 (like FlashCopy or PPRC) are limited to "mod-27", aren't they ?
