I don't have any success stories yet -- just war stories. We are
trying a couple different things on VM and Linux at the moment, but we haven't
gotten up to speed in either of them. (One of the projects -- an app from a
third-party -- had some disk performance problems that we are trying to iron
out; the other project is just now getting started.) The whole z/VM/Linux
thing has a lot to recommend it, but there are a lot of potential cultural
considerations in addition to the technical ones.
One great part for me is that z/VM allows me to be responsive: "What's
that? You need another Linux box? OK, give me a couple of hours and you'll
have it." One bad part is that sometimes I can look not so responsive: "Well,
yes, we could give that Linux guest 8 GB of memory, and I know you think you
need it, but -- trust me on this -- you wouldn't like it."
Another plus is that it allows me to try some new ideas, or it would if
I could get just a little more "research" time.
If we ever get our current projects up and going, I'll be sure to post
the results here.

On another note... I tried to go back and look for any responses
to my question about linux success stories or war stories. Only
found the one from Alan at Supervalue (but he didn't mention anything
about how "on-time" the project was or how smoothly it ran).
I know there are many others success stories and others similar
to my experience. I'm surprised there were not more responses
from IBM-MAINers.
