Do any of these editors support an "ISPF-like" hierarchy of directories? For
example, on open look in \aaa\x first, and then in \aaa\y, and finally in
\aaa\z - but always save the changed source code in \aaa\x?

I'm not quite sure exactly how You mean.

What Charles means is that in some ISPF panels (e.g. option 2, edit) you can specify a Project, then anything from 1 to 4 different Groups, and finally a Type. For example, you could merge 'ABC.DEVELOP.COBOL' with 'ABC.TEST.COBOL' and 'ABC.PROD.COBOL' in a single merged member list, where Group 1 = DEVELOP, Group 2 = TEST and Group 3 = PROD. If you then selected a member in the third library (i.e. PROD) and made changes and saved it, the updated member would automatically be copied to and saved in the first library (i.e. DEVELOP). In other words, the member in PROD would *not* be changed.

I'm well aware of how this works because SimpList has to go out of its way to undo this behavior!

For example, a SimpList user could merge 'USER01.MY.COBOL' and 'USER01.MY.COPYBOOK' and 'USER01.MY.JCL' in a single merged member list. If they then edited a member of the third library (i.e. JCL), they would *not* want the updated member to be copied to and saved in the COBOL library! Instead, SimpList has a setting that allows users to choose whether updated members should automatically be copied to and saved in the first library, or whether they should just be updated in the library in which the member was originally opened.
