where it says "create"? Or are the requirements to "compose"
stricter than to "create"?
Yes, you've read too much into it. If you go to the
page for the Professional version, you find this:
"Easily create Adobe PDF documents from Microsoft Office, Outlook,
Internet Explorer, Project, Visio, Access, Publisher, AutoCADĀ®, Lotus
Notes, or any application that prints."
So, you "create" from any application that prints.
