What sort of things are they looking to learn? Linux systems don't typically have "operators" looking after them, just system administrators. Have them look at SUSE Linux Administration http://www.novell.com/training/courseware/ts_proj_info.jsp?pid=12579 and SUSE Linux Advanced Administration http://www.novell.com/training/courseware/ts_proj_info.jsp?pid=11794 to see if that will meet their needs.
