Not knowing the internals of that SAN thing... But still... I was convinced that
all that is virtualized in such a way that waste of space is actually not an

there is actual data to store, allocating a big 3390 and not writing anything on

No. Unfortunately no. Such virtualisation was available in RVA (SVA)
family. It is partially available as SE/Flashcopy or TF/Snap and VDEV.
However it is not an option for regular volumes (except RVA/SVA).
BTW: SAN is not proper description. SAN consist of FICON cables and
switches. At the end of the cable is DASD box, aka disc system aka array.
