They are there, by default they allocate them to the SYS volume (the one they 
want to put the catalogs on).  They are likely there if you check closely.  The 
z/OSMF install is way harder than the serverpak ever was and the sad part is 
that they keep changing it to make it "better" but it seems to only get worse.  

I have installed it probably 50 times at 50 sites since it was first available, 
and each and every time has been slightly different.  (and it doesn't ever seem 
to get better for very long.  Sometimes they will "fix" something, then the 
next time I get it they have messed with it more.  I think the object for them 
is to dummy it down to the point where you won't bother to try to change where 
they want to place things or how large they want to make them.  

Unfortunately, they seem to not really care.  But in the end, it works, and I 
can (and do) always spend a couple hours moving things where they belong and 
making other things larger.  It's almost like they didn't put thought into how 
people will be able to easily upgrade or apply maintenance later.  There are 
easy ways and hard ways, and I think they want everyone to sue the hardest way 
possible.

Just keep at it, and you get through it all and it will just be a painful 
memory.
