As a good place to start learning about z/VM and its capabilities, I would recommend that you take a look at the following IBM Redbook:
"Introduction to the New Mainframe:z/VM Basics"
(http://www.redbooks.ibm.com/redpieces/abstracts/sg247316.html?Open).

It could be called a "z/VM for Dummies" type of publication, not that you're a dummy, of course. :-)

What is available off of the IBM RedBook site is a draft version, but I think it's quite good at covering modern z/VM and its components.
