On my last boat, an S2 27, I cut hatch boards from 3/4 finish grade plywood using the existing boards as a template. Instead of 3 boards, I reduced it to 2 so that I could have more useable area. I then cut large holes in the middle of each to receive screening. I primed and finished with white exterior paint to match the cockpit color. The boards were routered where they meet to create an overlap like the manufacturer boards to keep water out. They worked fine for overnights. A similar option may be a cost effective option.
