Thanks, Carl and Rob.  You've given me some great ideas.  The approach I am now 
thinking of taking is making the two cuts Rob suggested but then putting the 
hinges on the vertical, hull-side cut and installing a locking mechanism on the 
other end.  This way I wouldn't have to take the seatback out and put it 
somewhere at night, it would just swing back against the hull/bulkhead in the 
aft berth.  I think I will cut the seatback above the height of the cushions so 
I won't need to pull the cushions out to covert the berth.

The port aft berth in your galley forward model is huge and easy to get into.  
I was looking for a galley forward boat but found a great deal on this one and 
decided to make the sacrifice.
