Wow, saw this idea from Rob Adkins in a recent post (copied below) and wanted 
to start a new topic to discuss & hear from anyone who has this modification 
done to their Cat27.

My spin would be to maybe make the aft seatback removable so that the starboard 
quarterberth is more accessible.  Now it's like a coffin to sleep in and 
difficult to crawl into, but if the aft dinette seatback lifted out, or tilted 
FORWARD then problem solved.  

Note, my overnight trips are typically with one other dude and sleeping in the 
2 huge quarter-berths leaves the dinette table intact and the vberth for 
gear... less moving gear around.  My port side has, (starting from bow) hanging 
locker, bulkhead, sink, icebox, stove, then super-long 1/4-berth(not 
"aft-galley" like some of you).  SB side is head, bulkhead, dinette, and 1/4 
coffin-berth.

welcome to the group matt and congrats on catavinos. i vaguely remember the 
dinette layout and had a thought regarding your question. consider creating the 
aft settee of the dinette as a fold down seat back. two cuts made, one along 
the bottom of the back and one along the starboard wall and attaching brass 
hinges folding away from the berth. add a barrel latch for the upright fixed 
position when in use. i don't think the dinette structure is load bearing but
